If your current diet is high in breads, then you have higher calories from breads and you will most likely lose weight as you eliminate much of the breads.
But this way of eating does give you less options to eat, which can be difficult. It also can be more expensive.
If you don’t really need to be gluten free, then maybe try just cutting back on wheat and barley. Cutting back on breads and sugary foods too. You’ll be pretty likely to lose weight that way.
