Steam some corn, let it cool & cut it off the cob. Dice some red onion, bell peppers of your choosing (my favorites are red or orange), & cucumber. Mix all the veggies in a large bowl, salt & pepper to taste & the key ingredient is rice wine vinegar.
I recommend Marukan brand, lite version because it has low sodium & sugar.
